Gluten and Dairy Free Italian

This class concerns itself with traditional rustic country cooking enjoyed throughout the different regions of Italy but without gluten and dairy products. In this class we will prepare:
Genovese vegetable soup with pesto
Basilicata style chicken and saffron risotto
Homemade vegan ricotta with spice poached pears
